The Tokyo Michelin guide 2009 awarded Shin one star, recognizing it as an excellent restaurant in its category. The sushi is Edomae style, while the appetizers include dishes such as grilled conger eel with salt. The ingredients come from all over Japan, and the rice is a blend of Niigata and Ibaragi varieties that are cooked al dente. Shin is a bit of a hard find, but look for a red-brick building.

  • A quaint, cozy restaurant with limited seating capacity. Impeccable service and delicious sashimi and sushi. It is a treat to watch the handsome chef and his apprentice at work while sitting at the counter. A delightful experience.
