Sadaharu Aoki is a Japanese pastry chef who broke through the ranks and made it big in Paris. Having succeeded in that difficult market, he returned to Japan to open stylish cafes that showcase his attention to detail. He is particularly known for fusing Japanese ingredients with French baking techniques, so expect to see a lot of European pastries with green tea, sweet beans and other Japanese flavors. The eclairs and meulle filles are what made him famous.
