At this sophisticated restaurant you'll encounter one beautiful and well made dish after another. They put a lot of emphasis on preparing perfect dashi, which is the fish stock that is at the base of many Japanese preparations. If you can speak some Japanese or go with someone who can then get a counter seat to talk with the chef while s/he prepares your meal.
