The restaurant's name comes from Kojyu Nishioka, a famous potter, who was friends with the owner and in whose work the food is served. The chefs believe in letting the ingredients speak for themselves; the quality of the ingredients is absolute at Kojyu. The cooking combines traditional Japanese techniques and a few contemporary touches. The chef/owner is also a qualified sommelier and the wine list is a testament to his skills.
